Our newest coffee is traceable to a single producer–Wolde Hirbe–from Ethiopia’s Yirgacheffe region.
Wolde Hirbe’s 14.25 hectare farm is enormous by the standards of Ethiopian coffee farms, which are typically one hectare or less. Owning a larger farm has allowed Wolde Hirbe to take direct control of the harvesting and processing of his coffee, rather than having to use community resources. For this natural coffee, he employs nine pickers to collect the cherries during harvest season. He then inspects them for ripeness and uniformity, and sun dries them for three weeks.
Although Ethiopia’s coffee industry has made great strides in recent years, it is still rare to find coffees such as this delightful Wolde Hirbe lot that can be traced back to a single farm.
This coffee’s profile is recommended for espresso. We included recipes for other methods, if you want to try them out. View our V60, Aeropress and French Press recipes and our brewing instructions to learn more.
